Roasted Universal Green Rack of Lamb
A Rack of Lamb has always been a fancy staple for dinners menus. Roasted Universal Green Rack of Lamb is a great recipe to add to your next dinner table or party. Gorgeous, simple, earthy and flavorful.

Prepare the rack of lamb. Pat dry surface of lamb. Salt lamb thoroughly, front and back, and let sit for at least 15 minutes
Add the black pepper and salt. Let sit for at least 10 minutes before rubbing in the green seasoning front and back.
Marinate for at least an hour.
Preheat oven to 450°F.
Place meat in middle rack, bone down.

NOTE: Manner of cook time based meat doneness preference varies on oven internal temperature to lamb rack size/weight:
Estimate times:
- Rare: 10 minutes each side
- Medium-Rare 15 minutes each side
- Medium:: 20 minutes each side
- Medium-Well: 30 minutes each side
- Well: 35 minutes each side
If cooking less than well-done, placing rack in a broiler for 1 to 2 minutes gives a nice charred look and flavor.
Meat Doneness Internal Temperatures
Rare: 120-130 °F
Medium-Rare: 130-135 °F
Medium: 135-145 °F
Medium-Well: 145-155 °F
Well-Done: 155-165 °F
Why not add a fruit dipping sauce, like Raspberry Jam. Turkey has cranberry, lamb can have raspberry.
