Hot Hot Hot Buffalo Wings
Hot Wings has become a staple in most causal dining restaurants, sporting events and parties. Originating in Buffalo, New York, this simple dish has overcome being a trash meat to a must in the average American's next celebration. At least we wish it was so. We'll discuss all things Buffalo Wings, then get down to the basics of how we'll actually make the dish to enjoy when we want to.

Wings
- 1½ lbs chicken wings
- 20 tbsp cornstarch
- 1 tbsp sea salt
- 1 tbsp black pepper
- ½ tsp. garlic powder
- 8 cups oil canola, vegetable, etc.
Buffalo Sauce
- 3 tbsp unsalted butter
- 1¼ cup hot sauce any kind, Frank's Red Hot Sauce, etc.
- 1 tsp. chili flakes optional
- ¼ tsp. chili pepper or cayenne pepper
- ¼ tsp. black pepper
Ranch Dip
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup buttermilk
- 1 tbsp fresh chives chopped
- 1 tbsp fresh parsley chopped
- 2 clove garlic minced
- 1 tbsp onion powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. dried dill optional
Wings
Clean your wings, and dry with a napkin thoroughly.
After dried, add the salt, pepper and garlic powder, and let sit for at least an hour.
While waiting, make your Ranch Dip. (see below)
Prepare the cooking oil for frying on medium heat. Oil should reach 325℉.
While the oil is heating up, add the cornstarch to the wings.
Place the wings into the hot oil and fry to about 8-10 minutes. (While waiting, prepare you buffalo sauce.) Remove an continue until all batches have been fried once.
Next step, frying again or double frying. We do this to ensure optimal crispiness. Place your wings in the hot again, for 3-4 minutes. Remove from oil and let dry on a cooling rack or on a napkin for a few minutes before placing in final large bowl to pour the buffalo sauce over.
Buffalo Sauce
While you wait for the frying to be complete, heat on medium low your butter in a small saucepan.
Once melted, add the hot sauce of your choosing. Slowly mix together to incorporate the ingredients, then add the chili flakes, chili powder and black pepper.
Mix occasionally to avoid burning. And let sit on low heat until your ready to pour, you want this very warm or hot before pouring over wings.
After your wings have been double fried, place in bowl, and pour sauce over. Mix very well. Let sit for 5 minutes.
Ranch Dip
In a bowl, mix together the mayonnaise, sour cream, and buttermilk until smooth.
Add the chives, parsley, garlic, onion powder, salt, pepper, and dill. Stir well to combine.
Adjust seasoning to taste by adding more salt or pepper if needed.
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
Serve chilled with your delicious buffalo wings.
