- 3 lemon zest medium size
- 16 g mint leaves about 82 leaves
- 5 cups fresh water add more for less tarte/sweet
- 1¼ cup fresh lemon juice needs about 3 extra lemons
- 200 g sugar
Prepare a pitcher. Zest 3 lemons and place into pitcher. Cut in half and juice lemons, about 6 lemons in total (so extra lemons are needed.) The lemon juice should measure 1¼ in total in a measuring cup.
In a medium sized sauce pan, add the sugar and pour about ½ cup of lemon juice into the sugar. Boil over medium heat. Set aside after a rolling boil to cool.
After boiling, sit for 5 minutes before adding the mint into the sugar-lemon juice. Stir a little. Let stand for 2 minutes before scooping the mint out and into the pitcher.
Once warm, add the sugar-lemon mix. Add water. More water may be needed based on your preference in taste. Add extra garish, if needed.
Place in the fridge for three hours or add ice to consume immediately.
- Adding the mint into the sugar-lemon juice mixture gives a stronger mint flavor than adding it into the pitcher beforehand.
- You may add more mint if you prefer a very strong mint flavor, as the mint here is subtle/understated, but noticeable.
- The amount of mint leaves listed are both big and small. I believe weighing is the best for most accuracy.
