Breakfast Potatoes w/Bacon

Potatoes for breakfast? Yes please! Who doesn't enjoy a nice hearty breakfast, especially one that is reminiscent of brunch. Breakfast Potatoes w/Bacon are a nice hearty addition to your next breakfast feast.

Ingredients
  

  • 5 strips bacon cooked
  • 4 long potatoes not round
  • 2 tbsp. unsalted butter
  • 2 tsp. avocado oil or olive oil
  • 1 large onion white or yellow
  • 1 large sweet pepper or 4 small
  • 1 tbsp. creole seasoning no salt
  • 2 tsp. paprika
  • ½ tsp. sea salt
  • 1 tsp. black pepper
  • 1 tsp. garlic powder 3 garlic cloves, chopped
  • ½ tsp. cayenne pepper optional
  • 1 liter water

Instructions
 

  • On a cutting board, peel (optional) your washed potatoes. Cut your potatoes into cubes. The smaller they're cut, the faster it'll cook.
  • Place potatoes into medium pan with about a liter of water. Parboil on medium-high heat for about 5 minutes. Drain completely, and set aside.
  • In a medium pan or skillet, fry about 5 strips of bacon. Fry both sides to your preference of soft or crisp bacon. Remove strips and set aside.
  • Keep the grease from the bacon, and add your butter and oil. Mix well together. Make sure this is hot before adding your potatoes.
  • Add you potatoes to the pan and stir until everything is greased.
  • Add your creole seasoning and paprika and stir potatoes completely again.
  • Add your garlic seasoning, salt, black pepper and cayenne pepper and stir again.
  • Let sit in place for 1-2 minutes between stir to brown and get crispy. Stir occasionally and repeat this step. While waiting, prepare your chopped onions. After the last stir, add your chopped onions and stir in well again.
  • After a few minutes, add your sweet peppers and stir in, until softened.
  • At this point, the tell for completion of cooking is text level. If you want your potatoes more crispy, or your would like the onions or sweet pepper more charred.
  • Right before you officially end cooking, add your cooked bacon and do one final stir in. You're done.
  • Enjoy!

Notes

If you're using garlic cloves instead of powder.  Add them when you're heating the bacon grease, butter and oil.
If the heat becomes to high, or the potatoes look like they're going to burn, lower the temperature from medium-high to medium or even lower, if necessary.  You're stove temperature and type of pan effects the temperature for cooking this.
 
Onions and sweet potatoes are not required, but adds nicely to this dish.
 
If you would like to cook the onions early for a longer caramelization, you add them with the potatoes.
