- 2 tbsp. unsalted butter melted
Batter
- 250 g AP Flour
- 160 g brown sugar
- 27 g granulated sugar
- 1 stick unsalted butter melted, browned
- ¼ tsp. sea salt
- 1 tsp. vanilla extract
- ½ cup milk
- 2 eggs large
- 175 g blueberry fresh or frozen
- 20 g AP Flour for blueberries, see instructions
Instructions
Crumble Topping
- Melt the butter. As it melts, add together the sugar and flour.
- Pour the butter over the flour/sugar mixture, and mix until crumbly. Set aside until batter is ready.
Batter
- Preheat oven to 375 ℉.
- In a medium saucepan, melt the butter on medium heat until in reaches it's brown stage.
- Lower the temperature to medium-low, and add both sugars. Mix well until the sugar liquefies. Add the milk and mix. Mix until well combined.
- Add salt, vanilla and baking powder, and mix in.
- Turn off heat.
- Add a third of the 250g of flour. Mix well. Add one egg. Mix very well. Continue until everything is just combined. Don't overmix.
- In a cup or bowl, add the blueberries and 20g of flour together. Sift until well combined and each blueberries has flour over it, don't smash.
- Gently pour â…” of the blueberries in the muffin batter. Gently fold in, don't smash.
- Scoop the batter into each muffin liner. This recipe works for 12 standard muffins sizes or 5-6 large muffin sizes.
- Add the last â…“ blueberries as toppings for each muffin evenly.
