History

The history of corn tortillas dates back thousands of years to ancient Mesoamerican civilizations such as the Aztecs and Mayans. Corn, or maize, was a staple crop in these cultures, and tortillas were an integral part of their diet. The process of making tortillas involved nixtamalization, which is the soaking and cooking of dried corn kernels in an alkaline solution to enhance their nutritional value and make them more easily digestible. This ancient technique is still used today in the production of masa harina.
