Ingredients
 
 

  • 2 lb. carrots
  • 6 tbsp. honey
  • 6 cloves garlic chopped
  • 4 tbsp. unsalted butter
  • 3 sprigs thyme
  • 2 tbsp. olive oil avocado oil, or any healthy oil
  • 1 cup parmesan cheese shredded, divided
  • ¾ tsp. sea salt
  • 1 tsp. black pepper
  • 1 tsp. chili powder optional
  • 1½ tbsp. parsley optional

Instructions
 

  • On a cutting board, peel, then slice the carrots. Remove stem. Slice carrots into your preferred shape (sticks, coins etc.).
  • Preheat oven to 425℉.
  • In an oven-proof pan, add your butter and oil on medium heat. When the butter melts, add your garlic.
  • Cook your garlic for 1-2 minutes.
  • Add your honey and stir well, until combined.
  • Finally, add your carrots. Make sure all the carrots are combined into the honey-butter mix.
  • After, add your parsley, salt, black pepper, chili powder and thyme. Stir nicely, and let cook for 5 minutes on medium-low.
  • Turn off heat, remove thyme sprigs. Add half of your parmesan over the carrots. Gently stir, spread evenly, then add the second half over the top.
  • Place in oven, uncovered, for 15-25 minutes, or until tender.
  • Let cool, then serve.
  • Enjoy!
