We LOVE potatoes, we LOVE bacon, so any combination of the two can never be wrong. Breakfast potatoes with Bacon is a deadly-great combination to have for your next breakfast or brunch feast.
Parboiling Potatoes
Parboiling allows our potatoes to be softened ever so slightly before we fry them. Why not fry them completely? You can, it just takes more effort and time, and can potentially burn your potatoes. To learn about different ways to parboil foods, here’s some great visual examples.
The word “parboil” is from the Old French word parboillir, which actually means to boil thoroughly, and does not have any association with the word “part” or “partial,” the word has acquired its current meaning to “partially boil.”
Bacon and Bacon
Bacon goes with everything. We’re not debating this point. It goes with everything–savory or sweet. Bacon is one of the most unique flavors because it literally can compliments multiple dishes. For this breakfast potatoes, the bacon adds extra crispiness, while also a hint of extra saltiness and smoky flavor that’s hard to replicate. We also use the bacon grease for frying, and additional flavor for the potatoes. Nothing about bacon will be discarded in this recipe.
Butter, Bacon Grease & Oil?!
Yeah, it’s a lot, but necessary. All three beyond their frying functions comes with different purposes:
- Butter: Allows for a savory taste, especially when the butter begins to brown slightly, while frying the potatoes.
- Bacon Grease: Also allows for a savory taste, while also having a high smoke point for frying.
- Avocado Oil: Purely for it’s health benefits, along with its high frying smoke point, it fries the potatoes nice and crispy.
Together the create a delicious and flavorful mix for these breakfast potatoes.
Season Just Enough
Potatoes are very tricky with seasoning them. If you under-season, they’re bland. if you over-season them, they’re ruined. We season them just enough to be extremely tasty, but buildable for more flavor based on your own preference.
Creole Seasoning is the x-factor. It, along with paprkia are the two most important ingredients to season the potatoes with. They not only bring flavor, but color. The perfect color for a reddish-golden potato. This seasoning also displays the best of Americana flavor.
Breakfast Potatoes w/Bacon
Ingredients
- 5 strips bacon cooked
- 4 long potatoes not round
- 2 tbsp. unsalted butter
- 2 tsp. avocado oil or olive oil
- 1 large onion white or yellow
- 1 large sweet pepper or 4 small
- 1 tbsp. creole seasoning no salt
- 2 tsp. paprika
- ½ tsp. sea salt
- 1 tsp. black pepper
- 1 tsp. garlic powder 3 garlic cloves, chopped
- ½ tsp. cayenne pepper optional
- 1 liter water
Instructions
- On a cutting board, peel (optional) your washed potatoes. Cut your potatoes into cubes. The smaller they're cut, the faster it'll cook.
- Place potatoes into medium pan with about a liter of water. Parboil on medium-high heat for about 5 minutes. Drain completely, and set aside.
- In a medium pan or skillet, fry about 5 strips of bacon. Fry both sides to your preference of soft or crisp bacon. Remove strips and set aside.
- Keep the grease from the bacon, and add your butter and oil. Mix well together. Make sure this is hot before adding your potatoes.
- Add you potatoes to the pan and stir until everything is greased.
- Add your creole seasoning and paprika and stir potatoes completely again.
- Add your garlic seasoning, salt, black pepper and cayenne pepper and stir again.
- Let sit in place for 1-2 minutes between stir to brown and get crispy. Stir occasionally and repeat this step. While waiting, prepare your chopped onions. After the last stir, add your chopped onions and stir in well again.
- After a few minutes, add your sweet peppers and stir in, until softened.
- At this point, the tell for completion of cooking is text level. If you want your potatoes more crispy, or your would like the onions or sweet pepper more charred.
- Right before you officially end cooking, add your cooked bacon and do one final stir in. You're done.
