Developing a Great Cookie
When you’re creating, or at least trying to create a great cookie, one aspect you’ll have to note is what makes it great to you. Everyone is different, but like aforementioned, some aspects are universal. Start from there and continue building on certain requirements. That’s the key.
We first noticed that using pure butter, while delicious, left the cookie tough after completely cooled, unless underbaked, which seems common. So we tried adding shortening, which helped immensely. Then we noticed that any fat used will of course melt in the oven while baking, so chilling the ingredients to retain a puffy shape – not completely flat – was important along with adding baking powder, not just the typical baking soda for a chocolate chip recipe.
Chilling the cookie dough helps the shape of the cookie remain tall even after baking. Freezing for at least a day is the best option to hold the shape, but just by using cold ingredients for the dough, you are already ahead of the normal steps of chocolate chip making. If you have less time, place in the fridge or freezer while your oven preheats. Think of this cookie like you’re making sugar cookies. Cold dough is a great dough.
Sea Salt Secret
Sweet and salty has become a big deal now. From regular everyday food to kettle popcorn it inescapable. We discussed this prior with our Art of Food Pairing learning series. As such, we can try salty and sweet with our chocolate chip cookies. Flaky or large pieces of sea salt sprinkled over your next, warm chocolate chip cookie will add an exciting element to your cookie.
Now this next step was just us pissing in the wind, but we loved the recipe as it stood, but something was still missing. It wasn’t crumby enough. That’s where bread flour came it. Bread flour has more gluten than AP flour and of course cake flour. We tried half and half for the flour, and the cookie became perfect-for us. Now it’s your turn to try it.
Gourmet Classic Chocolate Chip Cookies
Ingredients
- 220 g brown sugar
- 201 g granulated sugar
- 188 g AP Flour
- 188 g bread flour
- 1 stick butter cold, cubed
- 90 g shortening
- 2½ cups chocolate chips morsel, wafers or chopped
- 2 tsp. milk cold
- 2 eggs
- 1 tsp. vanilla extract
- 1 tsp. baking powder
- ¼ tsp. baking soda
- ½ tsp. sea salt extra to sprinkle on top
Instructions
- Cube the cold butter, to help it mix better.
- In a mixing bowl, place the butter, shortening and both granulate and brown sugar into a mixing bowl. Mix well until smoothed
- Add the baking soda, baking powder, and salt, and mix well again.
- After, add the vanilla extract, milk and both eggs. Mix until all has been incorporated.
- Finally, add the chocolate chips. This should be well incorporated throughout the dough.
- Scrape the sides of the bowl, and then with an ice cream scooper, scoop the dough into equal sizes, roll in your hand, and place 1-inch a part on a parchment lined baking sheet.
- You have two options after scooping the dough and rolling with your hands: 1) place in fridge for 20 minutes while oven preheats, or 2) place and cover in the freezer for a day then place in oven to bake.
- Preheat oven to 390℉. Bake for 12 minutes or when the edges of the cookie turn golden brown. Let cookies sit on tray for 5 minutes before removal. You may sprinkle extra salt while it sits on tray.

What Can We Add?
Typically chocolate chip cookies do not need anything to be great, but since this is gourmet, we can experiment with these additions:
- Malted Milk Powder: Sprinkle a tablespoon or two to this recipe to add a complex, yet subtle malt flavor.
- Espresso Powder: Coffee and cocoa will always be a match, as the espresso will enhance the chocolate flavor.
