Hey pancake lovers! Are excited about breakfast? Here we’ll share with you our pancake-making adventure. We decided to make the best homemade pancakes, and let me tell you, this was quite the journey. The best part is this recipe came together quite quickly. Yep, I went rogue and just threw together some ingredients to see what would happen. After tasting perfection, the goal was to remake it, which worked!
But let’s start from the beginning: I started by gathering the basics: flour, eggs, milk, butter, and a pinch of salt. I didn’t measure anything because, well, who has time for that when your fighting cravings!? I just eyeballed it all, with my basic baking knowledge and hoped for the best.
I mixed the flour, sugar, baking powder, then the vanilla and egg together, slowly adding them with the sour cream until the batter looked just right. I wanted it to be thick but still pourable, if that makes sense. I snuck a pinch of vanilla to really kick up the flavor. The easiest pourer available would be a liquid measuring cup. Finally I melted a little unsalted butter in the heated skillet and poured the batter in the pan.
Making Of
After getting my batter and skillet ready, I finally poured the batter into the hot, buttered skillet. The sizzle as it hit the hot surface was so satisfying. I watched as little bubbles formed on the surface of the pancakes, a sure sign that they were ready to be flipped.
Always make sure the batter around the top edge is cooking before attempting to flip the pancake.
After the first bite, I was pleasantly surprised. These pancakes were fluffy, flavorful, and just all-around delicious. Unstructured cooking can be amazing, sometimes.

Best Homemade Pancakes Ever!
Ingredients
- 188 g AP flour
- 75 g granulated sugar
- 126 g sour cream room temp.
- 2 tbsp. oil canola, vegetable, coconut (liquid) works.
- 2 tsp. vanilla extract
- 1 tbsp. baking powder
- 1 egg
- ¾ cups milk
- â…› tsp. cinnamon optional
Instructions
- In a medium mixing bowl or measuring cup, add the flour, sugar, cinnamon and baking powder.
- Add the egg, vanilla, milk and sour cream, mixing after each addition added.
- Finally, add the oil. Mix in well, and set batter aside. If you want to ADD TOPPINGS OR ADDITIONS , add them now
- Heat skillet on medium. Add in small amount of butter, enough to grease the skillet thoroughly.
- Add slowly, the batter to your skillet , leaving enough movement room if making multiple pancakes at once. Sizing is based on your preferences. Cooking times and servings will have to alter.
- When top of batter's edge looks cooked (approx. 5 min), flip pancake to other side with a spatula. Cook for at least 3 minutes before flipping pancakes to check doneness.
- Repeat until batter is finished.
- Add your favorite fruit, some butter and grab go-to syrup and enjoy!
