Ruby Red Velvet Pound Tea Cake
Scenario: It's morning, and a moist Ruby Red Velvet Pound Tea Cake is on your kitchen table just staring at you, but you're on a diet, what do you do? Duh, eat the best thing ever! Diet tomorrow!
Ingredients
Cake
- 226 g butter room temp.
- 200 g granulated sugar
- 188 g AP flour
- 1 tsp. apple cider vinegar
- ¼ cup milk room temp.
- 10 g cocoa powder
- 2 tsp. vanilla
- 4 eggs large, room temp.
- 1 tsp. baking powder
- red food coloring gel food coloring is best
Frosting
- 2 oz. cream cheese very soft
- 1 tbsp. unsalted butter very soft or melted
- 1 tsp. clear vanilla
- 250 g powdered sugar
Instructions
Cake
- Preheat oven to 350° F.
- In a measuring cup, add the milk and vinegar and mix slightly. Set aside for a few minutes.
- In a mixing bowl, mix room temperature butter and sugar. Cream for about two to three minutes.
- Add cocoa powder and baking powder and mix those in.
- After, immediately add vanilla and milk, and mix very well.
- Add your flour in, making sure you scrape the sides and bottom. Try not to overmix.
- Now, add your eggs, two at a time, just mixing in. Again don't overmix, or even mix too fast. It makes your pound cake streaky.
- Add your food coloring until it's bright ruby red. Remember, cakes lighten up slightly when baked, so you want it really red.
- Add the last two eggs and again, just mix in . Pour into a greased loaf pan, and bake for about an hour.
- Wait for cake to cool before proceeding with icing cake.
Frosting
- In a bowl, mix the cream cheese and butter together., until well combined.
- Add the vanilla and mix in well again.
- Add the powdered sugar and mix until very smooth. It should be runny, but that's what you want for a smooth coating. It will dry on after 15-20 minutes.
- Pour frosting on cake, preferably while cake is still in the pan, but has loosened. Wait for frosting to dry somewhat before serving, Enjoy!
