Ingredients
  

Cake

  • 226 g butter room temp.
  • 200 g granulated sugar
  • 188 g AP flour
  • 1 tsp. apple cider vinegar
  • ¼ cup milk room temp.
  • 10 g cocoa powder
  • 2 tsp. vanilla
  • 4 eggs large, room temp.
  • 1 tsp. baking powder
  • red food coloring gel food coloring is best

Frosting

  • 2 oz. cream cheese very soft
  • 1 tbsp. unsalted butter very soft or melted
  • 1 tsp. clear vanilla
  • 250 g powdered sugar

Instructions
 

Cake

  • Preheat oven to 350° F.
  • In a measuring cup, add the milk and vinegar and mix slightly. Set aside for a few minutes.
  • In a mixing bowl, mix room temperature butter and sugar. Cream for about two to three minutes.
  • Add cocoa powder and baking powder and mix those in.
  • After, immediately add vanilla and milk, and mix very well.
  • Add your flour in, making sure you scrape the sides and bottom. Try not to overmix.
  • Now, add your eggs, two at a time, just mixing in. Again don't overmix, or even mix too fast. It makes your pound cake streaky.
  • Add your food coloring until it's bright ruby red. Remember, cakes lighten up slightly when baked, so you want it really red.
  • Add the last two eggs and again, just mix in . Pour into a greased loaf pan, and bake for about an hour.
  • Wait for cake to cool before proceeding with icing cake.

Frosting

  • In a bowl, mix the cream cheese and butter together., until well combined.
  • Add the vanilla and mix in well again.
  • Add the powdered sugar and mix until very smooth. It should be runny, but that's what you want for a smooth coating. It will dry on after 15-20 minutes.
  • Pour frosting on cake, preferably while cake is still in the pan, but has loosened. Wait for frosting to dry somewhat before serving, Enjoy!
